I'll list my favorite games per console.
NINTENDO 64: Rayman 2: The Great Escape--a runner's up would be Conker's Bad Fur Day; I had a blast playing either game.
PLAYSTATION 2: God Of War--It was a lot more challenging yet engaging than the second one, I believe. Plus it was the start of Kratos, so yeah. Can't go wrong with that.
GAMECUBE: Super Smash Bros. Melee--Not much explaining. Super Smash Bros. had been one of the most fun multiplayer games I had ever played during its time, and then I heard about a sequel. My expectations flew soaring high, and the overall package of the game definitely delivers.
WII: Zelda Twilight Princess--Mock me all you want, Zelda fans. I loved this game. I loved its dark tone, its approach on the plot, its characters; everything was great about this game.
XBOX 360: Red Dead Redemption--Yes, like Twilight Princess, it's not exclusive to the console, but it's the most fun I've had playing the Xbox, so that's why it gets the title. Ohyeah, and John Marston. Nuff said.
PLAYSTATION 3: Uncharted 2--This definitely ranks in the top 3 of my favorite games of all time. I mean, the game is just AMAZING! My most favorite memory is playing the demo for the first time after already having high expectations for the game. The level that they through me in consisted of a runaway train headed in my direction, crushing and running over everything in its path. There's no explanation for it; I just have to run like hell and shoot the damn thing until it stops. It's a simple "Character A escape from Character B" objective, but done so finely and with so much care that my expectations were blown away. The game was amazing--I now knew that much--but when I finally got my hands on the game and completed it, the demo seemed so mediocre compared to how great the game is. You have feelings for every single character, and those feelings are very believable. There are a ton of things going on in this game such as the described demo above, things which require you to have quick reflexes, but nothing ever feels out of place. It's no doubt one of the greatest adventure games of all time, but it's so much more than that. And if you have a Playstation 3 or have a friend who owns one, and you haven't played this, then go buy it right now. Your money will not be wasted.
