Asked this in chat, but do you guys think it's gonna be a replacement for the current "first phase" of the dragon fight (blowing up the crystals on top of the spires so the dragon can't heal), perhaps by making you go through the dungeon to find the crystals instead? Personally I'm really hoping it's just a post-dragon dungeon structure that generates similarly to ocean monuments, with one spawning every so often on other, separate end islands.

Sucks that there's not enough information to tell, the typical obsidian spires are missing from the screenshot and the end island really isn't that big- you'd think there'd be a couple visible. But maybe it is in a different area, maybe the End is no longer just one singular asteroid with nothing else around.

I'm super hyped for this. The End/dragon bossfight is one of my biggest pet peeves with the game (even bigger than horses being lag machines and villagers only being useful for one-way emerald farming slave labour), so this is literally on par with Mojang releasing a mod API for me. Really hope we at least get some pretty blocks out of it, but I sure as hell wouldn't say no to a complete End overhaul. Anything is better than the current one.

Sad thing is, the reason for this is the speed at which they run is way too fast for the game to render chunks. Single player has it harder, it has an internal server.

Also I see what looks like Ender bars and lamps.

^ This. I'm waiting until a more stable snapshot or full release to try it out for myself.

I stopped playing PC Minecraft ages ago because every update causes more lag than the last one.
I'm under the assumption this upcoming update is no different.

I wouldn't be so quick to assume that. I haven't actually done any research on it yet, but according to Chau last night on irc, the new update finally optimized particles. They don't render as entities anymore, so that should cut down on a ton of lag, hopefully. That gives me hope that they're really working on some stuff like fixing their broken foundation now instead of just dicking around and adding new features.
