Out of random curiosity I found a wiki page dedicated to organization, not just for hotbars but for storage and other things. There's many hotbar suggestions on the bottom too, in case you're feeling adventurous and want to experiment with a new layout. You guys might want to give it a read sometime, it could give you some ideas.

FTB:

1 Food (usually carrots)
2 Jumpsword (eventually staff)
3 Pick
4 Mattock (functions as axe, shovel, and hoe)
5 Extra tool (usually watering can, bow, bucket, or wand)
6 Torches (if I'm caving/mining/dungeoning) or other extra tool (if I need it), otherwise blocks/spare
7 Blocks/spare
8 Blocks/spare
9 Hang glider <3333333333

Of course when I do things like complex infusion recipes I have to keep my hotbar clear so I can put stuff on the pedestals or whatever.

Generally, I don't go for PVP stuff, so I don't have food on mine, and I play lots of Vanilla, both single and multi-player, so this would likely make sense for that...

1 Pick (generally stone or iron)
2 Axe (same)
3 Sword (generally iron, unless doing mineshaft, then stone)
4 Shovel, or other tool as required, like bucket, lighter, whatever.
5 Spare
6 Dirt or Gravel
7 Cobble
8 Stairs
9 Torch

Also, I generally use the scroll wheel for selecting tools instead of the keyboard.

If I actually end up getting mortar some how, I put the torches in place of the gold nuggets and the mortar on the last slot. I usually make armour mid game when I know we're getting pushed.
